    2. Cut 1 stick (about 113 grams) refrigerator-cold butter into the flour until the butter is in pea-sized pieces (use a pastry cutter, two knives, or a food processor with a shredding disk and a frozen stick of butter).
    3. Add ice water and bring the dough together: start with 50 grams ice water and add a tablespoon or two at a time as needed, mix with a rubber spatula and finish by massaging with hands until it just holds together; do not over-knead.
    4. Form into a disk, wrap tightly in plastic wrap, and refrigerate at least 1 hour to relax gluten and keep butter cold.

    7. Return the sautéed chicken and any accumulated juices to the skillet, bring to a simmer and cook about 5 minutes until the chicken is cooked through.
