    Prepare chicken

    6. Remove the fried chicken and place it on a wire rack to cool; repeat until all chicken is fried.

    Assembly & Finish

    1. Combine 3 1/2 cups (270 grams) mozzarella and 3/4 cup (70 grams) Parmigiano-Reggiano in a bowl and mix until thoroughly combined.
    2. Arrange the crispy chicken pieces on a foil-lined baking sheet, spoon a generous amount of the tomato sauce over each piece, then pile the mozzarella-Parmesan mixture generously on top of the sauce.
