    1. Hydrate 1 tablespoon gelatin with 1 tablespoon water; set aside.
    2. Grate and combine 4 ounces sharp cheddar, 3 ounces gruyère, 3 ounces young gouda, and 2 ounces parmesan; set the mixture aside.
    3. Bring 1/2 cup evaporated milk to a boil, then remove from heat and whisk in the hydrated gelatin until fully melted into the milk.
    4. Return the pan to low heat and add the grated cheese mixture while blending with an immersion blender to make the mixture as smooth and homogenous as possible.
    5. Transfer the cheese mixture onto plastic wrap–lined surface: ideally spread thin on a lined baking sheet, or press into a plastic-wrapped lined ramekin and mold into a cylinder.
    6. Refrigerate until solidified, about 4 hours.
    7. Remove the molded cheese from the plastic wrap and slice into processed-cheese-style slices.

    Sandwich bread

    1. Combine 400 milliliters water, 1 packet instant yeast, 650 grams all-purpose flour, 50 grams sugar, 5 grams salt, and 45 grams unsalted butter in the bowl of a stand mixer.
    2. Knead with the stand mixer for 5 to 7 minutes.
    3. Place the dough in a covered oiled bowl and let rise for 45 minutes.
    4. Punch down the dough and place it into a loaf pan; loosely tent with plastic wrap and let rise for 45 minutes or until doubled in size.
    5. Brush the loaf with melted butter and bake in a 400 degree Fahrenheit oven for 25 to 35 minutes until deeply golden brown.
    6. Remove the loaf from the pan and place on a cooling rack; verify the internal temperature is about 200 degrees Fahrenheit.
    7. Let rest for 1.5 hours or until completely cooled, then trim and slice as needed for sandwiches.

    Assembly and cooking

    1. Assemble sandwiches with slices of white sandwich bread and the sliced processed cheese product (or use yellow American cheese for the control).
    2. Optionally add olives on top of the cheese in the sandwich.
    3. Butter the outside of the bread (or use butter mixed with a little mustard, full fat mayonnaise, or light olive oil as alternatives) and cook sandwiches one at a time in a nonstick skillet until the crust is a deep brown and the cheese is melty.
